Sometimes life is interesting. Sometimes life is really boring, sometimes I really crave boring. Over the holidays between work, family, and attempting to maintain full social order things can get crazy. I love spending time with everyone but I do look forward to the time when everything calms down and you can subtly day-dream about lazy sunday morning with a good book, a mug of tea, and some coffee cake without worrying about having to be anywhere.
I know it’s Monday, but I encourage you to carve out some time this week to try out this recipe, your lazy weekend morning will thank you later.
Banana Chocolate Chip Coffee Cake
Adapted slightly from Bon AppetitPreheat the oven to 350 degrees1 1/2 cups semisweet chocolate chips
2/3 cup (packed) golden brown sugar
1 tablespoon ground cinnamon
1 1/2 cups all purpose flour
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup sugar
1/2 cup (1 stick) unsalted butter, room temperature
1 large egg
2 large ripe bananas
2 tablespoons greek yogurtFor the Streusel:Combine the chocolate chips, brown sugar, and cinnamon in a small bowl and set aside.For the batter:1. Stir together the dry ingredients (flour, baking soda, baking powder, and salt) in a bowl.2. Cream together the sugar and butter. Once fluffy, scrape down and add the egg.3. Scrape down again and add in the mashed bananas and greek yogurt.4. Scrap a final time and add the dry ingredients until just combined.5. Spoon the batter in thirds into a pre-butter loaf pan, adding a third then sprinkling the streusel, adding another third and so on.6. Top with left over streusel. Bake at 350 until it springs back when you touch it, or a toothpick comes out clean. (Aprox 40 minutes.)
